Clark's Mediterranean Egg Secret Special
Clark created this when a regular customer complained his morning specials were "so dang hearty" he had to nap after breakfast. Clark whipped up the following just for him. The recipe still lives on a hand-scrawled index card taped to the wall by the griddle.
Mediterranean Egg Special
- Prep a bed of arugula
- Layer on some nice prosciutto
- Cook off an egg, sunny side up
- Slide egg onto arugula
- Dot with goat cheese
- Drizzle with balsamic & olive oil
- Surround with toast points like rays of the sun
